I know you already maintain the UniFi controller. I am running several OpenWRT APs. Someone has developed a functional controller for OpenWRT. Whoever is developing this thing is really dropping the ball at building it into Docker. They require you to run a script that downloads 8 different images and has them all connect in a stack. I think someone could slap this together into one container for a simpler, single container, version that would leave out the postfix server, etc. Anyways, have a look at their project.
