How can I change the image config to get the couchpotato logs?

you can create a service to tail the logfiles: https://github.com/linuxserver/docker-couchpotato/commit/4e105aa5d1e930687a4553b17ed3ade7d9fb529e#diff-63be3a4b746a8e31d55b3d610408c928
